Theoretical studies of strongly interacting many-body systems in one dimension have tended to focus on integrable models. However, such models cannot account for dissipative processes which control many experimentally relevant quantities. In this talk, I will discuss recent work extending Luttinger liquid theory to account for the finite lifetime of excitations. I will focus on the microscopic origin of the bulk viscosity and explore ways in which this quantity can be measured in quantum wires and cold atomic gases.
